Jean Farrar, who has lectured on nutrition
at Eisenhower Hospital in Rancho Mirage, California, and
the College of the Desert in Palm Desert, California, recently
shared some of her excellent recipes with us.
The USDA for Aging at many universities
has evaluated more than 40 vegetables and fruits for their
antioxidant activities, to see how well they fight free
radicals. Blueberries topped the list. Combined with banana
and soy milk, the ingredients of these delicious treats
give your family nothing but health and goodness.
1/2 ripe banana
1/2 cup (125 ml) vanilla soy milk
3/4 cup (188 ml) frozen or fresh blueberries
In a food processor or blender, combine ingredients and
process 1 to 2 minutes, until smooth. Pour into popsicle
mold, insert sticks, and freeze until solid. Makes 2 cups
(500 ml) of mix.
Note: you can also use 3/4 cup (188 ml) mixed brown
rice flour, brown rice bran and soy flour for thicker Soysicles.
