Soy Power Milk

Jean Farrar, who has lectured on nutrition at Eisenhower Hospital in Rancho Mirage, California, and the College of the Desert in Palm Desert, California, recently shared some of her excellent recipes with us.

It is best to buy whole ginger root from your local supermarket or health food store.

1 pound (453.59237 g) raw organic soybeans
1 cup (250 ml) unsweetened pineapple juice
3-4 slices ginger root

Soak soybeans in cold water overnight. In the morning, boil the soybeans on high with 2 slices of ginger root for half an hour, or until the soybeans crack apart. Place 2 cups of soybeans in the blender and add 1 cup of pineapple juice. You can add additional ginger slices according to your taste. Blend to a fine mixture, then serve hot or iced.
